Traditional Moroccan Couscous with Vegetables

Ingredients
- 2 cups couscous
- 4 cups vegetable stock
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 red onion, diced
- 3 stalks celery, diced
- 1 tomato, diced
- 2 cloves garlic, minced
Instructions
- To start the couscous, rinse it under cold water and then strain in a sieve to remove some of the excess starch.
- Next, combine the stock, salt, pepper and olive oil, bring to a boil and then pour over the couscous. Cover tightly with plastic wrap.
- Let sit for approximately 10 minutes to rehydrate. Uncover and fluff with a fork.
- Add red onion, celery, tomato and garlic. Mix well and seasoned with salt and pepper to your liking.
- Serve immediately or let cool and use as the base to make a salad.
